Ingredients (6 servings):

  • 200g DU BOIS DE LA ROCHE Sponge Fingers
  • 100g Butter
  • 3 Eggs
  • 6 Tablespoon of sugar
  • 2,5dl Milk
  • 3 Gelatin sheets
  • 1 Rum calyx
  • 1 Teaspoon of corn starch
  • Vanilla extract
  • 100g Red fruits

Directions:

Separate the egg yolk from the white. Beat the egg yolk with the sugar. Add milk, corn starch and vanilla essence. Bring the mixture to simmer.

Soak the gelatin sheets in cold water and drain them to remove the excess water.

Remove from heat and add the gelatin. Let the cream cool down without letting solidifying.

Beat the butter with the remaining sugar and add the fluffy egg whites. Mix the mixture into the cream and dispose in the Charlotte mold.
 
Sprinkle the Lady Fingers with rum and arrange them in a Charlotte mold. 

Cover the Lady Fingers with this cream and let refrigerate for 6 hours.





Presentation Tip:

When ready to serve gently remove the Charlotte from the mold and decorate it with red fruits.
